Raw Fudge {A Healthy Holiday Treat}

It's nearly impossible to avoid sweets during the holiday season. So, do the proactive thing - make your own healthier versions! 

This is one of my favorite healthy sweet treats. It's rich, chocolately, smooth & full of flavor. Every bite melts in your mouth! And, it's so packed full of raw nutrition, you'll have no need for regrets. Just throw 'em out the window! Skip 'em! Instead, indulge and enjoy every bite. 



Raw Fudge

Makes approximately 25 small pieces


1 cup raw walnuts (soaked & drained)

1 cup medjool dates, pitted & roughly chopped

¼ cup raw cocao

2 teaspoons coconut oil, melted

1 teaspoon vanilla

¼ teaspoon coarse sea salt

¼ cup dried cherries, roughly chopped



Place walnuts in the bowl of a food processor. Pulse until chopped. Add dates and continue to pulse, stopping often to scrape down the sides and incorporate the ingredients. Once well blended, but not too smooth, add raw cocao powder, coconut oil, cherries, vanilla and salt. Process until the mixture is smooth. If it's too sticky, add more cocoa or 1 teaspoon coconut oil. If it's too try add water, 1 tablespoon at a time, or 1 teaspoon more coconut oil. The mixture will form into a ball with a dough like consistency. Press the dough into a small baking dish with wet fingers. Freeze for a couple of hours before serving, and store extras in the freezer for leftover treats.
